How to choose between two workshops

Distance matters less than fit. A setup or bow rehair is worth a short trip; a restoration is worth a long one. Ask what the workshop does most of — a maker who spends the week at the bench cutting bridges will set your instrument up better than a shop that mostly sells. Ask for an estimate in writing before work starts, and ask to hear the instrument before and after.
